๐ฅฉ Tips for Choosing Meat for Bossam
You can choose the meat for bossam based on your preference and desired texture:
- Pork belly (whole belly): Recommended if you want a juicy and tender texture.
- Pork shoulder (front leg): Great if you prefer a leaner and lighter taste.
- Pork hind leg: A good option if you want something affordable yet still lean.
For this recipe, I used both whole pork belly and pork shoulder, but using just one type of meat is also perfectly delicious.

๐ณ How to Make Bossam
1. Prepare the ingredients
Prepare the meat, bay leaves, whole black peppercorns, whole garlic, and green onion ends.
Add 1/2 shot of soju and 1 tablespoon of doenjang (fermented soybean paste).
The key is to use only 1 tablespoon of doenjang!
Adding too much can make the flavor too strong, which may overpower the natural taste of the meat.
2. Boil the meat
Place the meat and prepared ingredients in a pot with enough water.
Simmer over medium-low heat for 40โ50 minutes until the meat is cooked and tender.
3. Cool and slice the meat
Once cooked, let the meat cool slightly on a cutting board, then slice it into bite-sized pieces.
Cutting it while too hot may cause the juices to escape.

๐ฅ Great Side Dishes and Condiments for Bossam
- Fresh kimchi (Geotjeori): Adds a sweet and tangy flavor to balance the richness of the meat.
- Cheongyang chili peppers & garlic: Adds a spicy kick and enhances the overall flavor.
- Pickled radish (Moo-sam): Provides a refreshing, crunchy texture.
- Recommended dipping sauce: Minced garlic + sesame oil + a pinch of black pepper.
Dipping the bossam in this sauce brings out a nutty aroma and adds a whole new layer of flavor to the meat.

๐ก Final Tips
- Use only 1 tablespoon of doenjang โ adding too much can make the flavor too strong and overpower the natural taste of the meat.
- Simmer the meat gently over medium-low heat to keep it tender and juicy.
- Prepare side vegetables and sauces according to your personal taste to enjoy it even more.
Bossam is easy to make at home while still being healthy and delicious.
